🥗 HOLIDAY SALAD — Festive Cranberry, Roasted Pear & Farro Glow Bowl

A warm, cozy, elegant dish that’s light enough for the season but rich with holiday flavor.

 

Ingredients

  • 1 ripe pear, sliced and roasted

  • ½ cup cooked farro

  • 3 cups baby spinach or winter greens

  • ÂĽ cup fresh cranberries (or dried, rehydrated)

  • 2 tbsp toasted pistachios

  • 2 tbsp vegan feta or goat cheese (optional)

  • Pinch of cinnamon

 

Honey‑Cider Dressing

  • 1 tbsp apple cider vinegar

  • 1 tsp honey or maple syrup

  • 1 tsp Dijon mustard

  • 2 tbsp olive oil

  • Salt & pepper

 

Instructions

  1. Roast pear slices at 400°F for 12–14 min with a drizzle of oil and cinnamon.

  2. In a bowl, layer greens → warm farro → roasted pears → cranberries.

  3. Add pistachios and optional cheese.

  4. Drizzle with dressing and enjoy warm or room temp.
