• ½ cup cooked farro
  
  

• 3 cups baby spinach or winter greens
  
  

• ¼ cup fresh cranberries (or dried, rehydrated)
  
  

• 2 tbsp toasted pistachios
  
  

• 2 tbsp vegan feta or goat cheese (optional)
  
  

• Pinch of cinnamon

Honey‑Cider Dressing

• 1 tbsp apple cider vinegar
